1 can (15 oz) black beans, drained and rinsed

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1/2 cup corn kernels (fresh, canned, or frozen)

1/4 cup diced red onion

1/4 cup chopped fresh cilantro

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil or butter, for frying

Optional: Salsa, guacamole, or sour cream for serving

Instructions
 

Prepare the Filling: In a mixing bowl, combine the drained black beans, shredded cheese, corn, diced red onion, cilantro, ground cumin, smoked paprika, salt, and pepper. Mash the mixture slightly with a fork for better cohesion, leaving some of the beans whole for texture.

    Assemble the Quesadillas: Heat a non-stick skillet or griddle over medium heat. Lay one tortilla flat on a clean surface, and spread a quarter of the bean mixture evenly over half of the tortilla. Fold the other half over the filling to create a half-moon shape. Repeat with the remaining tortillas and filling.

      Fry the Quesadillas: In the heated skillet, add 1 tablespoon of olive oil or butter. Carefully place one quesadilla in the skillet and cook for about 3-4 minutes, or until the bottom is golden brown and crispy. Gently flip the quesadilla using a spatula, adding more oil or butter if necessary, and cook the other side for another 3-4 minutes.

        Repeat Cooking: Once the first quesadilla is done, transfer it to a plate and keep it warm. Repeat the frying process for the remaining quesadillas in the same manner.

          Serve: Cut each quesadilla into wedges and serve warm with salsa, guacamole, or sour cream on the side for dipping.
