1 medium green cabbage (about 2-3 lbs)

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon chili powder (adjust to taste)

½ teaspoon sea salt

Freshly cracked black pepper, to taste

2 tablespoons nutritional yeast (optional, for a cheesy flavor)

2 tablespoons sesame seeds (optional, for added crunch)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper for easier cleanup.

    Prepare the Cabbage: Remove any outer leaves from the cabbage, and then cut it into quarters. Remove the core and slice each quarter into thin strips (about 1/4 inch thick). You can also shred it for a finer texture.

      Season the Cabbage: In a large mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, chili powder, sea salt, and freshly cracked black pepper. If you're using nutritional yeast, add that in too. Toss the cabbage strips in the mixture until they are well-coated.

        Arrange the Cabbage: Spread the seasoned cabbage evenly across the prepared baking sheets, making sure not to overcrowd them. This will ensure they become crispy instead of steaming.

          Bake: Place the baking sheets in the preheated oven and bake for about 15-20 minutes, or until the cabbage chips are golden brown and crispy. Flip the chips halfway through to promote even browning. Keep an eye on them towards the end to prevent burning.
