8 small corn tortillas

Charcuterie Fillings:

100g prosciutto, sliced

100g salami, sliced

100g pepperoni, sliced

100g chorizo, diced

Cheese:

150g aged cheddar, shredded

100g goat cheese, crumbled

Vegetables:

1 cup arugula or mixed greens

1 medium avocado, sliced

1 small red onion, thinly sliced

Condiments:

½ cup fig jam or honey

¼ cup whole grain mustard

Spices:

1 tsp smoked paprika

1 tsp black pepper

½ tsp cayenne pepper (optional for heat)

Oil for frying:

Vegetable or canola oil, for frying

Instructions
 

Prepare Taco Shells:

    - In a large frying pan, heat about 1 inch of oil over medium heat.

      - Once hot, use tongs to carefully fold a tortilla in half and fry until golden and crispy, about 2-3 minutes per side.

        - Drain on a plate lined with paper towels and repeat with remaining tortillas.

          Cook Charcuterie:
