Ingredients
  

2 boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper, to taste

4 slices of sourdough or ciabatta bread

4 slices of provolone cheese

1/2 cup Caesar dressing

1 cup romaine lettuce, chopped

2 tbsp grated Parmesan cheese

Olive oil, for frying

Instructions
 

Marinate the Chicken:

    - In a bowl, combine the buttermilk with a pinch of salt and pepper. Submerge chicken breasts in the buttermilk and refrigerate for at least 30 minutes, or up to 2 hours for extra tenderness.

      Prepare the Breading:

        - In one shallow bowl, mix the flour, garlic powder, onion powder, paprika, and a pinch of salt and pepper. In a second shallow bowl, place panko breadcrumbs.

          Bread the Chicken:

            - Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each chicken breast in the flour mixture first, shaking off the excess, and then dip into the panko breadcrumbs, pressing down to adhere well.

              Fry the Chicken:

                - In a large skillet, heat a generous drizzle of olive oil over medium heat. Once hot, add the breaded chicken breasts. Fry for about 5-7 minutes on each side, or until golden brown and the internal temperature reaches 165°F (75°C). Remove and let rest on a paper towel-lined plate.

                  Assemble the Sandwich Melts:

                    - Preheat your oven to 375°F (190°C). On one slice of bread, spread a tablespoon of Caesar dressing, add a handful of chopped romaine lettuce, and a slice of crispy chicken. Top with another tablespoon of Caesar dressing and sprinkle with grated Parmesan cheese. Add a slice of provolone cheese on top, then place another slice of bread on top to complete the sandwich.

                      Toast the Sandwiches:

                        - In a skillet, melt a small amount of butter over medium heat. Place the sandwiches in the skillet and toast until golden brown, about 3-4 minutes per side. Alternatively, you can place them on a baking sheet and toast in the oven for about 10 minutes, flipping halfway through.

                          Serve:

                            - Slice the sandwiches in half and serve hot. Dip in additional Caesar dressing for a tasty twist!
