Crispy Chicken Caesar Tortilla Pockets

2 large flour tortillas

1 cup cooked chicken, shredded or diced

½ cup Caesar dressing

1 cup romaine lettuce, chopped

½ cup cherry tomatoes, halved

½ cup grated Parmesan cheese

½ cup croutons (store-bought or homemade, for added crunch)

Salt and pepper to taste

Olive oil (for grilling)

Prepare the Chicken: In a bowl, mix the cooked chicken with Caesar dressing until well-coated. Season with salt and pepper to taste.

    Build the Filling: In another bowl, combine the chopped romaine lettuce, halved cherry tomatoes, grated Parmesan cheese, and croutons. Gently toss to combine.

      Assemble the Tortilla Pockets: Lay one tortilla flat on a clean surface. Spread half of the chicken mixture along the center. Top with half of the lettuce mixture. Fold the sides of the tortilla inward, then roll it up tightly from the bottom to form a pocket. Repeat with the second tortilla and remaining ingredients.

        Grill the Tortilla Pockets: Heat a skillet over medium heat and add a drizzle of olive oil. Once hot, place the tortilla pockets seam-side down in the skillet. Grill for about 3-4 minutes on each side or until they turn golden brown and crispy.

          Serve: Remove the tortilla pockets from the skillet and let them cool slightly. Cut them in half diagonally and serve with additional Caesar dressing on the side for dipping.
