Crispy Chickpea Caesar Salad

For the Crispy Chickpeas:

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

For the Caesar Dressing:

½ cup Greek yogurt

2 tablespoons mayonnaise

2 tablespoons lemon juice

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

2 cloves garlic, minced

Salt and pepper to taste

2 tablespoons finely grated Parmesan cheese (optional)

For the Salad:

4 cups Romaine lettuce, chopped

¼ cup cherry tomatoes, halved

¼ cup shaved Parmesan cheese (or to taste)

Freshly ground black pepper, to taste

Optional: Croutons for extra crunch

Instructions
 

Prepare the Crispy Chickpeas:

    - Preheat your oven to 400°F (200°C).

      - Spread the rinsed chickpeas onto a clean kitchen towel and pat them dry—this helps them get crispy!

        - In a mixing bowl, combine the chickpeas with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until all chickpeas are evenly coated.

          - Transfer the seasoned chickpeas to a baking sheet lined with parchment paper and spread them out in a single layer.

            - Roast in the preheated oven for 20-25 minutes, shaking the pan halfway through, until they're golden brown and crispy.

              Make the Caesar Dressing:

                - In a medium bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, and minced garlic until smooth and creamy.

                  - Season with salt and pepper to taste, and stir in the grated Parmesan cheese if using. Adjust consistency with a splash of water if it's too thick.

                    Assemble the Salad:

                      - In a large bowl, combine the chopped Romaine lettuce, cherry tomatoes, and shaved Parmesan.

                        - Drizzle the Caesar dressing over the salad and toss gently to coat all ingredients evenly.

                          - Add the crispy chickpeas on top and sprinkle with extra black pepper and croutons if desired.

                            Serve:

                              - Serve immediately, enjoying the contrast of crispy chickpeas and fresh greens with the creamy dressing.
