½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon black pepper

2 large eggs

1 tablespoon olive oil

Fresh parsley (for garnish)

Instructions
 

Prepare the Eggplant:

    - Start by washing and slicing the eggplant into ½-inch thick rounds. Place the slices on a clean kitchen towel and sprinkle them with salt. Let them sit for about 20-30 minutes to draw out excess moisture and bitterness. Afterward, pat them dry with paper towels.

      Set Up Breading Station:
