1 cup all-purpose flour

2 large eggs, beaten

1 ½ cups panko breadcrumbs

1 cup grated Parmesan cheese

1 tablespoon Italian seasoning

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon black pepper

1 cup marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish

Prepare the Eggplant: Place the cubed eggplant in a colander, sprinkle generously with salt, and let it sit for about 30 minutes to draw out excess moisture. Rinse the salt off and pat the cubes dry with paper towels.
