Crispy Feta Eggplant Bites

1 large eggplant, sliced into 1/2 inch rounds

1 cup all-purpose flour

3 large eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup crumbled feta cheese

2 tablespoons fresh parsley, chopped (for garnish)

Olive oil (for frying)

Lemon wedges (for serving)

Instructions
 

Prep the Eggplant: Sprinkle salt on both sides of the eggplant slices and let them sit in a colander for 30 minutes. This will help to draw out moisture and bitterness. Rinse and pat dry with paper towels.

    Set Up Bread Stations: In three separate shallow bowls, place the flour in the first, the beaten eggs in the second, and a mixture of breadcrumbs, garlic powder, oregano, smoked paprika, salt, and pepper in the third.

      Coat the Eggplant: Dip each eggplant slice first into the flour, shaking off the excess. Then dunk it into the beaten eggs, allowing any excess to drip off. Finally, coat it thoroughly with the breadcrumb mixture, pressing gently to ensure the crumbs adhere.
