1 cup quinoa, rinsed

2 cups water or vegetable broth

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 bell pepper (any color), diced

1 avocado, diced

1/4 red onion, finely chopped

1/2 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

Zest of 1 lemon

Zest of 1 lime

Juice of 1 lemon

Juice of 1 lime

3 tablespoons olive oil

Salt and pepper to taste

Optional: Feta cheese for topping

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and water (or vegetable broth). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Prepare the Dressing: In a small bowl, whisk together the lemon juice, lime juice, olive oil, lemon zest, lime zest, salt, and pepper. Adjust seasoning as desired.

      Combine Vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, avocado, red onion, parsley, and mint.

        Combine Quinoa and Vegetables: Add the cooked quinoa to the bowl of vegetables. Pour the dressing over the salad, gently tossing everything together until evenly coated.
