1.5 lbs baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)

1 tablespoon grated Parmesan cheese (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 15 minutes until fork-tender but not falling apart. Drain and let them cool slightly.

      Make the Garlic Butter: While the potatoes are cooling, melt the butter and olive oil in a small saucepan over medium heat. Add the minced garlic, smoked paprika, salt, and pepper. Stir frequently until the garlic is fragrant but not browned, about 2-3 minutes. Remove from heat.

        Toss the Potatoes: In a large bowl, toss the cooked potatoes with the garlic butter mixture until they are well-coated.

          Bake the Potatoes: Spread the potatoes out in a single layer on a baking sheet lined with parchment paper. Ensure they have plenty of space to crisp up. Bake for 25-30 minutes until golden brown and crispy, flipping once halfway through cooking.
