12 large jalapeño peppers

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup grated parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/4 teaspoon smoked paprika

1/4 teaspoon black pepper

1/4 teaspoon salt

1 cup all-purpose flour

2 large eggs, beaten

2 cups panko breadcrumbs

Prepare the jalapeños: Preheat your oven to 375°F (190°C). Carefully slice the jalapeños in half lengthwise and scoop out the seeds and membranes using a small spoon or melon baller to reduce heat. Set aside.

    Make the cheese filling: In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, grated parmesan cheese, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix thoroughly until the cheeses are well blended and the mixture is smooth.

      Stuff the jalapeños: Using a small spoon or a piping bag, fill each jalapeño half generously with the cheese mixture, pressing it down slightly to ensure it's packed in.

        Prepare the breading station: Set up a breading station with three bowls: one with all-purpose flour, one with the beaten eggs, and the last with panko breadcrumbs.

          Bread the poppers: Dip each stuffed jalapeño in the flour first, shaking off any excess. Next, coat it in the beaten egg, allowing any excess to drip off. Finally, roll the jalapeño in the panko breadcrumbs until fully coated. Repeat for all jalapeños.

            Fry the poppers: Heat oil in a deep frying pan or pot over medium heat (about 350°F/175°C). Carefully place the jalapeño poppers in batches, frying for about 3-4 minutes, or until they are golden brown and crispy. Avoid overcrowding the pan to maintain the oil temperature. Remove with a slotted spoon and drain on paper towels.

              Serve: Allow the poppers to cool slightly before serving. These are best enjoyed fresh, either on their own or with a side of ranch or your favorite dipping sauce.
