Ingredients

2 large chicken breasts, sliced into thin cutlets

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crispiness)

Zest of 1 large lemon

Juice of 2 lemons

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and black pepper to taste

Fresh parsley, finely chopped (for garnish)

Olive oil for frying

Instructions

Marinate the Chicken: In a bowl, combine the lemon juice, lemon zest, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken cutlets and marinate for at least 30 minutes (or up to 2 hours in the refrigerator) to enhance the flavor.

Prepare Breading Stations: Set up three shallow bowls for the breading process. In the first bowl, add the flour seasoned with a pinch of salt and pepper. In the second bowl, whisk the eggs until smooth. In the third bowl, mix the breadcrumbs with a pinch of salt and extra lemon zest for flavor.

Bread the Cutlets: Take each marinated chicken cutlet and dip it into the flour, shaking off excess. Then, immerse it in the egg, allowing any excess to drip off before finally coating it in the breadcrumbs. Press down lightly to ensure an even coating. Repeat for all cutlets.

Heat the Oil: In a large skillet, heat about ½ inch of olive oil over medium-high heat. To test if the oil is hot enough, drop a small piece of breadcrumb into the oil; if it sizzles immediately, the oil is ready.

Fry the Cutlets: Carefully place the breaded chicken cutlets into the hot oil, without overcrowding the pan. Fry for about 4-5 minutes per side, or until golden brown and crispy. Adjust the heat as necessary to prevent burning. Once cooked through, transfer to a plate lined with paper towels to drain excess oil.

Serve: Garnish the crispy lemon chicken cutlets with fresh parsley. Serve immediately with lemon wedges on the side for an extra zesty kick!
