Ingredients

8 ounces mozzarella cheese (block, not shredded)

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

Oil for frying (vegetable or canola)

Marinara sauce (for dipping)

Instructions

Prep the Cheese: Cut the mozzarella block into bite-sized cubes (about 1-inch pieces). Lay them on a paper towel to absorb excess moisture while you prepare the breading station.

Set Up Bread Station: In three separate bowls, place flour mixed with salt and black pepper in the first, whisk the eggs in the second, and combine breadcrumbs with garlic powder and Italian seasoning in the third.

      Coat the Cheese Bites:

        - Take one mozzarella cube and dip it into the flour, ensuring it's fully coated.

          - Next, transfer the coated cube to the egg mixture, letting any excess drip off.

            - Finally, roll the egg-coated cube in the seasoned breadcrumbs, pressing lightly to adhere. Repeat this process for all cheese cubes.

Chill the Bites: Once all the mozzarella pieces are coated, place them on a baking sheet lined with parchment paper and freeze for about 30 minutes. This step helps them keep their shape while frying.

Heat the Oil: In a deep pot or a large skillet, pour in enough oil to submerge the bites (about 2 inches deep) and heat to 350°F (175°C). To test if the oil is ready, carefully drop a small piece of bread into the oil—if it bubbles and browns, it’s good to go.

Fry the Bites: Working in batches, carefully drop the frozen mozzarella bites into the hot oil. Fry for about 2-3 minutes or until they are golden brown and crispy. Avoid overcrowding the pan to maintain the oil temperature.

Drain and Serve: Using a slotted spoon, remove the bites and place them on a plate lined with paper towels to absorb excess oil. Repeat until all the bites are fried.

Enjoy with Sauce: Serve warm with marinara sauce for dipping. Watch out for the gooey, melty center as you take a bite!
