Instructions

Prepare the Shrimp:

    - Pat the shrimp dry with paper towels to remove excess moisture. This will help the coating stick and improve crispiness.

      Set Up Breading Station:

        - In three separate shallow bowls, set up your breading station:

          - Bowl 1: Place the all-purpose flour, seasoned with salt and pepper.

            - Bowl 2: Beat the eggs until smooth.

              - Bowl 3: Combine the panko breadcrumbs, garlic powder, and paprika.

                Bread the Shrimp:

                  - Dip each shrimp first into the flour, making sure it's fully coated. Shake off any excess flour.

                    - Next, dip the shrimp into the beaten eggs, letting any excess drip back into the bowl.

                      - Finally, coat the shrimp in the panko mixture, pressing gently to ensure it adheres well. Place the breaded shrimp on a baking sheet, ready for frying.

                        Heat the Oil:

                          - In a large deep skillet or pot, heat about 1 inch of vegetable oil over medium-high heat. To test if the oil is ready, drop in a small piece of bread; if it sizzles and bubbles, the oil is hot enough.

                            Fry the Shrimp:

                              - Working in batches, gently place the breaded shrimp into the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.

                                - Use a slotted spoon to transfer the shrimp to a paper towel-lined plate to drain excess oil.

                                  Prepare the Dipping Sauce:

                                    - While the shrimp are frying, in a small bowl, mix together the mayonnaise, sweet chili sauce, lime juice, and sriracha (if using). Stir until smooth and well combined. Adjust seasoning and spice level to your preference.

                                      Serve:

                                        - Arrange the crispy panko shrimp on a serving platter and garnish with fresh chopped cilantro. Serve alongside the dipping sauce for a perfect appetizer or main dish!
