Ingredients

1 pound large portobello mushrooms, cleaned and sliced into fry-like strips

1 cup all-purpose flour

2 large eggs

1 cup panko bread crumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking spray or olive oil for drizzling

Fresh parsley, chopped (for garnish)

Marinara sauce or ranch dressing (for dipping)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

Prepare the Bread Crumb Mixture: In a medium bowl, combine the panko bread crumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all the dry ingredients are evenly distributed.

Set Up Breading Station: In one bowl, place the flour. In a second bowl, beat the eggs until smooth. Set up your breading station by arranging the flour, beaten eggs, and breadcrumb mixture in a line.

Bread the Mushroom Strips: Take a mushroom strip and first coat it in flour, shaking off the excess. Then, dip it in the beaten eggs, allowing any excess to drip off. Finally, roll the mushroom strip in the breadcrumb mixture, pressing gently to ensure it sticks. Place the coated mushroom on the prepared baking sheet. Repeat with the remaining strips.

Spray or Drizzle with Oil: Once all the mushroom fries are breaded, lightly spray or drizzle them with olive oil. This helps them achieve a crispy texture while baking.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the fries are golden brown and crispy. Flip them halfway through cooking for even crispiness.

Garnish and Serve: Once they are done, remove the mushroom fries from the oven. Garnish with chopped fresh parsley for a pop of color. Serve hot with marinara sauce or ranch dressing for dipping.

Enjoy: Dive into these deliciously crispy Parmesan baked mushroom fries and savor the incredible flavors!
