2 pounds (900g) of Yukon Gold potatoes

1/4 cup (60ml) of vegetable oil or duck fat

1 teaspoon of sea salt

1/2 teaspoon of freshly ground black pepper

2 teaspoons of garlic powder

2 teaspoons of dried rosemary (or fresh if preferred)

1 tablespoon of fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional, for freshness)

Preheat your oven: Set your oven to 425°F (220°C) to prepare for roasting while you prep the potatoes.

    Prepare the potatoes: Wash the Yukon Gold potatoes thoroughly under cold water to remove any dirt. Peel them if preferred (or leave the skins on for extra texture). Cut the potatoes into even-sized chunks, about 2 inches each, ensuring they will cook evenly.

      Parboil the potatoes: In a large pot, bring salted water to a boil. Add the potato chunks and parboil them for about 10 minutes, or until they are just beginning to soften. Drain the potatoes into a colander and let them steam dry for a few minutes.

        Rough up the potatoes: After steam drying, gently shake the colander to roughen the edges of the potatoes. This will help achieve that crispy texture during roasting.
