Crispy Spinach Artichoke Bites

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and roughly chopped

1/2 cup cream cheese, softened

1/2 cup sour cream

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1 package (1 lb) puff pastry sheets, thawed

1 egg (for egg wash)

Olive oil spray (for crisping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Make the Filling: In a medium mixing bowl, combine the chopped spinach, chopped artichoke hearts, cream cheese, sour cream, Parmesan cheese, mozzarella cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined. Taste and adjust seasoning as needed.

      Prepare the Puff Pastry: On a floured surface, take one sheet of puff pastry and roll it out to about 1/8 inch thickness. Cut into 3-inch squares. You should be able to create about 12 squares from one sheet. Repeat with the second sheet.

        Fill the Pastry: Place a tablespoon-sized scoop of the spinach artichoke mixture into the center of each pastry square. Be careful not to overfill, or they may burst while baking.

          Seal the Bites: Fold each pastry square into a triangle, pressing the edges together to seal tightly. You can use a fork to crimp the edges for extra security and decoration.

            Brush and Bake: In a small bowl, whisk the egg and brush the mixture over the top of each pastry for a golden sheen. Lightly spray the tops with olive oil spray for extra crispiness.

              Bake: Place the bites on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until golden brown and puffed up.

                Cool and Serve: Once out of the oven, let them cool for a few minutes before serving. These bites are best enjoyed warm and can be paired with your favorite dipping sauce like marinara or ranch dressing.
