Crispy Sweet Potato Nachos

2 large sweet potatoes

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup canned black beans (rinsed and drained)

1 cup corn (canned or frozen, thawed)

1 cup cherry tomatoes (halved)

1/2 cup red onion (finely chopped)

1 cup shredded cheese (cheddar or Mexican blend)

1 avocado (diced)

1/4 cup fresh cilantro (chopped)

1/2 jalapeño (sliced, optional)

Lime wedges (for serving)

Sour cream or Greek yogurt (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Sweet Potatoes: Wash and peel the sweet potatoes, then slice them into thin rounds (about 1/4 inch thick). You can use a mandoline for uniform thickness.

      Season the Sweet Potatoes: In a large bowl, combine the sweet potato rounds, olive oil, paprika, garlic powder, salt, and black pepper. Toss until the sweet potatoes are evenly coated.

        Bake the Chips: Arrange the sweet potato slices in a single layer on a parchment-lined baking sheet. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden brown and crispy.

          Assemble the Nachos: Once the sweet potato rounds are baked, reduce the oven temperature to 350°F (175°C). On a large oven-safe platter or another baking sheet, layer half of the crispy sweet potato rounds, followed by half of the black beans, corn, tomatoes, red onion, and cheese. Repeat with the remaining ingredients to create a second layer.

            Melt the Cheese: Place the assembled nachos back in the oven for 10-15 minutes or until the cheese is melted and bubbly.
