Crispy Tortilla Egg Quesadillas

4 large flour tortillas

6 large eggs

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/2 cup diced onions

1/4 cup chopped fresh cilantro

1/4 teaspoon paprika

1/4 teaspoon cumin

Salt and pepper to taste

2 tablespoons butter or vegetable oil

Optional: Salsa or avocado for serving

Prepare the Filling: In a mixing bowl, whisk together the eggs. Add the diced bell peppers, onions, cilantro, paprika, cumin, salt, and pepper. Mix until everything is well combined.

    Cook the Eggs: In a non-stick skillet, heat 1 tablespoon of butter or oil over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are just set but still slightly runny. Remove from heat and set aside.

      Assemble Quesadillas: Lay out two tortillas on a clean surface. Divide the cooked egg mixture evenly between them. Sprinkle half of the cheddar cheese on top of each. Place the remaining tortillas on top, pressing down lightly.

        Crisp the Quesadillas: In the same skillet, add another tablespoon of butter or oil. Carefully place one quesadilla in the skillet. Cook for 3-4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese has melted. Remove from skillet and keep warm. Repeat with the second quesadilla.

          Cut and Serve: Once both quesadillas are cooked, cut them into wedges. Serve warm with salsa or sliced avocado for dipping.
