1 cup dried green or brown lentils, rinsed and drained

2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 can (14 oz) coconut milk

2 cups vegetable broth

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons curry powder

1 teaspoon ground ginger

1 teaspoon turmeric

1 teaspoon cumin

1/2 teaspoon chili flakes (adjust to taste)

1 can (14 oz) diced tomatoes, with juices

2 cups kale or spinach, chopped

2 tablespoons fresh lime juice

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

Prep the Ingredients: Start by thoroughly rinsing the lentils under cold water until the water runs clear. Dice the sweet potatoes, chop the onion, garlic, and greens, then set them aside.

    Assemble in the Crockpot: In your crockpot, add the rinsed lentils, diced sweet potatoes, chopped onion, minced garlic, curry powder, ground ginger, turmeric, cumin, chili flakes, and diced tomatoes with their juices.

      Add Liquids: Pour in the coconut milk and vegetable broth over the vegetable and spice mixture. Stir gently to combine all the ingredients.

        Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the lentils and sweet potatoes are tender.

          Add Greens: About 30 minutes before serving, stir in the chopped kale or spinach, covering again until wilted.

            Finishing Touches: Before serving, stir in the fresh lime juice and season to taste with salt and pepper.

              Serve: Spoon the stew into bowls, garnish with fresh cilantro, and enjoy!
