Crockpot Italian White Bean and Kale Stew

2 cups dried cannellini beans, soaked overnight and drained

4 cups vegetable broth

2 cups kale, stems removed and chopped

1 large onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 can (14.5 oz) diced tomatoes (with juices)

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (adjust to taste)

2 tablespoons olive oil

1 teaspoon salt (more to taste)

1/2 teaspoon black pepper

Juice of 1 lemon

Grated Parmesan cheese (for serving, optional)

Instructions
 

Prepare the Base: In a skillet over medium heat, warm the olive oil. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Garlic and Spices: Stir in the minced garlic, oregano, thyme, red pepper flakes, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.

      Combine in Crockpot: Transfer the sautéed vegetables to the crockpot. Add the soaked and drained cannellini beans, diced tomatoes with their juices, and vegetable broth. Stir to combine.

        Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the beans are tender.

          Add Kale: About 30 minutes before serving, add the chopped kale to the stew. Stir to combine and allow it to wilt into the stew.

            Finish Off: Once cooking is complete, stir in the lemon juice. Taste and adjust seasoning with additional salt and pepper if needed.

              Serve: Ladle the stew into bowls and top with grated Parmesan cheese if desired. Enjoy warm with crusty bread for dipping!
