2 pounds boneless, skinless chicken breasts

4 cups low-sodium chicken broth

1 cup heavy cream

1 medium onion, diced

3 cloves garlic, minced

2 carrots, sliced

2 celery stalks, diced

1 cup mushrooms, sliced

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

1 cup uncooked orzo pasta (or your preferred pasta)

Instructions
 

Prepare the Chicken: Place the chicken breasts at the bottom of the crockpot.

    Mix the Vegetables: In a bowl, combine diced onion, minced garlic, sliced carrots, diced celery, and sliced mushrooms. Layer this mixture over the chicken.

      Add the Liquids: Pour in the chicken broth and heavy cream. Stir in the diced tomatoes (with their juice), oregano, thyme, and Italian seasoning. Season with salt and pepper to taste.

        Cook: Cover the crockpot and cook on low for 6-8 hours, or on high for 4 hours, until the chicken is tender and cooked through.

          Shred the Chicken: Once the chicken is cooked, remove it from the crockpot and shred it using two forks. Return the shredded chicken to the soup.

            Add the Pasta: Stir in the orzo pasta and cook on high for an additional 30 minutes, or until the pasta is cooked al dente.

              Garnish and Serve: Once the pasta is ready, taste the soup and adjust seasoning if needed. Ladle the soup into bowls and garnish with fresh chopped parsley.
