2 medium yellow squash, sliced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 medium onion, chopped

4 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional, for heat)

1/4 cup fresh basil leaves, chopped

1/4 cup fresh parsley, chopped

Freshly grated Parmesan cheese (for serving, optional)

Instructions
 

Prep the Vegetables: Begin by washing and cutting all vegetables as indicated in the ingredients. Aim for uniform sizes to ensure even cooking.

    Layer in the Crockpot: In your crockpot, start layering the vegetables. Begin with the diced eggplant followed by zucchini, yellow squash, bell peppers, onions, and minced garlic. Pour the can of diced tomatoes (with juices) over the top.
