Ingredients

1 pound penne pasta

4 cups diced tomatoes (canned or fresh)

1 medium onion, diced

4 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

2 cups vegetable broth (or chicken broth)

1 tablespoon olive oil

Salt and pepper to taste

1 cup fresh basil leaves, chopped (for garnish)

1 cup grated Parmesan cheese (for serving)

Instructions

Prepare the Base: In your crockpot, combine the diced tomatoes, diced onion, minced garlic, dried basil, dried oregano, and red pepper flakes (if using). Stir well to combine.

Add Pasta and Liquid: Stir the uncooked penne pasta into the tomato mixture. Pour in the vegetable broth and drizzle the olive oil over the top. Season with salt and pepper to taste. Mix gently until everything is evenly distributed.

Cook: Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours, or until the pasta is al dente and the sauce has thickened to your liking.

Finish and Serve: Once cooked, stir in the fresh basil leaves. Taste and adjust salt and pepper if needed. Serve hot, topped with grated Parmesan cheese and additional fresh basil if desired.

Garnish and Enjoy: For an extra touch, serve your Slow-Cooked Tomato Basil Pasta with a drizzle of olive oil on top and a sprinkle of Parmesan.
