Ingredients

4 cups green cabbage, finely shredded

2 cups red cabbage, finely shredded

2 large carrots, grated

1 large apple (like Granny Smith), cored and julienned

½ cup crispy pecans, roughly chopped

¼ cup dried cranberries

½ cup green onions, sliced

½ cup plain Greek yogurt

¼ cup apple cider vinegar

2 tablespoons honey

1 tablespoon Dijon mustard

Salt and black pepper to taste

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the finely shredded green cabbage, red cabbage, and grated carrots. Toss to evenly distribute the colors and textures.

Add Apples and Nuts: Gently fold in the julienned apple, crispy pecans, dried cranberries, and sliced green onions into the cabbage mixture. This adds crunch and sweetness to the salad.

Make the Dressing: In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, honey, and Dijon mustard until smooth and creamy. Season with salt and black pepper to taste.

Combine: Pour the dressing over the coleslaw mixture and toss until all ingredients are well coated. Be careful not to bruise the apple pieces.

Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve chilled, garnished with extra pecans if desired.
