Crunchy Baked Mac & Cheese Balls

2 cups cooked macaroni pasta

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional)

Salt and pepper to taste

1 cup breadcrumbs (panko for extra crunch)

2 large eggs

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes, stirring constantly, until it forms a paste.

    Add the Milk: Gradually pour in the milk while continuing to whisk, ensuring there are no lumps. Cook until the mixture thickens and bubbles, about 5 minutes.

      Incorporate Cheese and Seasonings: Remove the saucepan from the heat and stir in the cheddar and mozzarella cheese until smooth. Then, add the garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and pepper. Mix well until everything is well combined.

        Mix with Pasta: In a large bowl, combine the cooked macaroni with the cheese sauce. Stir until the pasta is thoroughly coated. Allow the mixture to cool for about 30 minutes.

          Shape the Balls: Once cooled, use your hands to form the macaroni and cheese mixture into balls, approximately 1 to 1.5 inches in diameter.

            Prepare for Baking: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

              Bread the Balls: In one bowl, whisk the eggs. In another bowl, place the breadcrumbs. Dip each mac and cheese ball first into the egg, then roll it in the breadcrumbs, ensuring they are fully coated.

                Bake: Place the coated mac and cheese balls on the prepared baking sheet and lightly spray the tops with cooking spray. Bake for 15-20 minutes or until they are golden brown and crispy.
