4 medium zucchinis

1 cup cherry tomatoes, halved

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the zucchinis: Cut each zucchini in half lengthwise and scoop out the seeds and some of the flesh using a spoon, creating a boat shape. Leave about 1/4 inch of the flesh on the sides. Reserve the scooped-out flesh for later use.

      Mix the filling: In a bowl, combine the reserved zucchini flesh, halved cherry tomatoes, breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, pepper, and olive oil. Mix until all ingredients are well combined.

        Stuff the zucchini boats: Spoon the filling mixture into each zucchini half, pressing it down slightly to pack it in.

          Bake: Place the stuffed zucchini boats on the prepared baking sheet and bake for 25-30 minutes, or until the zucchinis are tender and the tops are golden brown and crispy.

            Garnish: Once baked, remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired, and serve warm.
