1 block (14 oz) firm tofu, pressed and drained

1 cup panko breadcrumbs

½ cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup buffalo sauce (store-bought or homemade)

8 small corn or flour tortillas

1 cup shredded red cabbage

½ cup diced tomatoes

½ avocado, sliced

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Prepare the Tofu: Preheat your oven to 425°F (220°C). Slice the pressed tofu into 1-inch cubes. Pat them dry to ensure they are as moisture-free as possible.

    Set Up Breading Station: In one bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and pepper. In another bowl, place the panko breadcrumbs.

      Bread the Tofu: Toss each tofu cube in the flour mixture until fully coated, shaking off any excess. Next, dip the floured tofu into the panko breadcrumbs, pressing gently to ensure they stick.

        Bake the Tofu: Line a baking sheet with parchment paper and place the breaded tofu cubes in a single layer. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
