For the Cookies:

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup old-fashioned oats

1 cup chopped pecans or walnuts (optional)

For the Salted Caramel:

1 cup granulated sugar

6 tablespoons unsalted butter

½ cup heavy cream

½ teaspoon sea salt

Instructions
 

Prepare the Salted Caramel:

    - In a medium saucepan over medium heat, add the granulated sugar. Stir constantly until the sugar melts and turns a light amber color.

      - Once melted, carefully add the butter (the mixture will bubble up). Stir until combined and the butter is melted.

        - Slowly drizzle in the heavy cream, whisking continuously until smooth. Remove from heat and stir in sea salt. Let the caramel cool slightly while you prepare the cookies.

          Make the Cookie Dough:

            - Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

              - In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

                - Add the eggs one at a time, followed by the vanilla extract. Mix until well incorporated.

                  - In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.

                    - Fold in the oats and chopped nuts if using.

                      Form the Cookies:

                        - Using a tablespoon, scoop cookie dough onto the prepared baking sheets, leaving about 2 inches between each cookie to allow for spreading.

                          - Press a small divot in the center of each cookie and drizzle about 1 teaspoon of the cooled salted caramel into it.

                            Bake the Cookies:

                              - Bake the cookies for 12-15 minutes, or until golden brown around the edges and slightly soft in the middle.

                                - Remove from the oven and let them cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.

                                  Drizzle with Extra Caramel (Optional):

                                    - If desired, once the cookies are cool, drizzle any leftover salted caramel over the top for an extra treat!
