Crunchy Jalapeño Cheese Bites

1 cup fresh jalapeños, halved and seeded

8 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1 cup all-purpose flour

2 large eggs, beaten

2 cups panko breadcrumbs

Prepare the Jalapeños: Preheat your oven to 400°F (200°C). Slice the jalapeños in half lengthwise and carefully remove the seeds and membranes (you can wear gloves to protect your hands).

    Make the Cheese Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are fully combined and creamy.

      Stuff the Jalapeños: Spoon the cheese mixture generously into each jalapeño half. Ensure they are well filled, packing the cheese slightly to prevent it from spilling out when cooking.

        Set Up Breading Station: Prepare three shallow dishes: one with flour, one with the beaten eggs, and one with panko breadcrumbs.

          Bread the Jalapeño Bites: Dip each stuffed jalapeño first into the flour, then into the beaten egg, and finally coat it thoroughly with panko breadcrumbs. Repeat for all jalapeño halves.
