2 cups pecan halves

1/2 cup pure maple syrup

1/4 cup brown sugar, packed

1/2 teaspoon cinnamon

1 teaspoon pure vanilla extract

1 tablespoon coconut oil (or unsalted butter)

1/2 cup rolled oats

1/4 cup dried cranberries (optional, for added sweetness and color)

1/4 cup dark chocolate chips (optional, for drizzling)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

    Toast the Pecans: Spread the pecan halves on the prepared baking sheet and toast them in the oven for about 8-10 minutes until they are fragrant and golden brown. Stir halfway through to ensure even cooking. Remove from the oven and set aside to cool slightly.

      Prepare the Maple Glaze: In a medium saucepan over medium heat, combine the maple syrup, brown sugar, cinnamon, salt, and coconut oil (or butter). Stir continuously until the sugar has dissolved and the mixture comes to a gentle boil. Let it bubble for 2-3 minutes, then remove from heat and stir in the vanilla extract.

        Combine Ingredients: In a large mixing bowl, combine the toasted pecans, rolled oats, and dried cranberries (if using). Pour the warm maple glaze over the pecan mixture and stir well until everything is evenly coated.

          Shape the Clusters: Using a spoon or your hands, form small clusters (about 1-2 tablespoons in size) and place them back on the lined baking sheet, leaving some space in between each cluster as they will spread slightly during baking.
