1 pound fresh asparagus, tough ends trimmed

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Zest of 1 lemon (optional, for extra flavor)

Olive oil spray (or cooking oil of choice)

Preheat your oven: Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the asparagus: Rinse and trim the asparagus spears, cutting off the tough, woody ends.

      Set up a dredging station: In three separate shallow bowls, prepare the dredging station:

        - In the first bowl, add the all-purpose flour.

          - In the second bowl, beat the eggs.

            - In the third bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, black pepper, and lemon zest if using.

              Coat the asparagus: Working with one spear at a time, first, dredge the asparagus in flour, shaking off any excess. Then, dip it in the beaten eggs, letting any excess drip off. Finally, roll it in the breadcrumb mixture, ensuring it is fully coated. Place the coated asparagus on the prepared baking sheet and repeat with the remaining spears.

                Spray with oil: Once all the asparagus fries are coated, lightly spray them with olive oil to help them crisp up in the oven.

                  Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes or until the asparagus is golden brown and crispy. Shake the pan halfway through the baking time to ensure even cooking.
