1 block (14 oz) extra-firm tofu, pressed and drained

2 large whole wheat pita breads

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup non-dairy milk (or regular milk)

1 tablespoon Dijon mustard

1 tablespoon olive oil (for drizzling)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Tofu: Slice the pressed tofu into bite-sized cubes, approximately 1-inch thick. Set aside.

      Make the Pita Crust: Tear the whole wheat pita breads into smaller pieces and place them in a food processor. Pulse until the pita is broken down into fine crumbs. Transfer the crumbs to a shallow bowl.

        Prepare the Breading Station: In another shallow dish, combine the flour, garlic powder, paprika, salt, and black pepper. In a third shallow bowl, whisk together the non-dairy milk and Dijon mustard until well combined.

          Breading the Tofu: Take a tofu cube and dip it into the flour mixture, shaking off any excess. Next, dip it into the non-dairy milk and mustard mixture, allowing any excess to drip off.
