Over the decades, the popularity of chocolate chip cookies has only grown, becoming a staple in households across the globe. Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

2 teaspoons ranch seasoning mix (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for heat)

Salt and freshly cracked black pepper, to taste

Fresh parsley or chives, chopped, for garnish (optional)

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up.

Pat dry the chickpeas: Drain and rinse the chickpeas well. Spread them out on a clean kitchen towel or paper towels and pat dry thoroughly to remove excess moisture. This step is key for achieving maximum crunch.

Toss the chickpeas: In a large mixing bowl, combine the dried chickpeas, olive oil, ranch seasoning mix, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and pepper. Toss until the chickpeas are evenly coated with the mixture.

Spread on the baking sheet: Transfer the seasoned chickpeas to the prepared baking sheet, spreading them out in a single layer to ensure even roasting.

Bake in the oven: Place the baking sheet in the preheated oven and bake for 25-30 minutes, stirring or shaking the pan halfway through to promote even browning. The chickpeas should be golden brown and crunchy when done.

Cool and garnish: Once roasted, remove the chickpeas from the oven and allow them to cool for a few minutes. They will continue to harden as they cool. If desired, garnish with fresh chopped parsley or chives for a pop of color and flavor.

Serve and enjoy: Enjoy your crunchy ranch chickpea snack straight from the oven, or store them in an airtight container for up to a week for a delicious, healthy snack anytime!
