2 medium cucumbers

2 tablespoons sesame oil

1 tablespoon soy sauce (or tamari for gluten-free)

2 cloves garlic, minced

1 tablespoon rice vinegar

1 teaspoon sugar or honey (optional)

1 tablespoon sesame seeds, toasted

2 green onions, finely sliced

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Cucumbers: Start by washing the cucumbers thoroughly. Slice them into thin rounds or half-moons, depending on your preference.

    Salt the Cucumbers: Place the cucumber slices in a bowl and sprinkle with salt. Toss to coat evenly and let them sit for 10-15 minutes. This will help draw out excess moisture, making the salad crunchy.
