2 cups edamame (in pods, frozen or fresh)

3 tablespoons sesame oil

4 cloves garlic, minced

2 tablespoons soy sauce (low sodium preferred)

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup (for vegan option)

2 tablespoons sesame seeds (white or black, or a mix)

1 teaspoon red pepper flakes (optional, for some heat)

Salt and pepper to taste

Fresh lime wedges and chopped cilantro for garnish

Prepare the Edamame: If using frozen edamame, cook according to package instructions (usually boiling for 3-5 minutes until tender). Drain and set aside. If using fresh, simply steam or boil until bright green and tender, about 5-7 minutes.

    Make the Flavor Base: In a large skillet or pan, heat the sesame oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until aromatic but not browned. Be careful not to burn the garlic.

      Add Seasonings: Stir in the soy sauce, rice vinegar, honey/maple syrup, and red pepper flakes if using. Mix well and let it simmer for an additional minute to combine the flavors.
