Crunchy Taco Lettuce Wraps

1 lb ground turkey or beef

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade seasoning: 1 tsp chili powder, 1 tsp cumin, ½ tsp paprika, ½ tsp salt, ¼ tsp black pepper)

1 cup canned black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 medium tomato, diced

1 avocado, diced

1 cup shredded cheddar cheese

1 cup fresh cilantro, chopped

1 lime, cut into wedges

1 head of iceberg or Romaine lettuce, leaves separated

Optional toppings: salsa, sour cream, jalapeños

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

    Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the ground turkey or beef to the skillet. Cook, breaking it apart with a wooden spoon, until browned and cooked through (approximately 5-7 minutes).

        Drain any excess fat if necessary, then add the taco seasoning and stir well to combine. If using the homemade seasoning, mix it in now. Add about ½ cup of water, simmer, and cook for 3-5 minutes until thickened.

          Mix in the black beans and corn, allowing to heat through for an additional 2-3 minutes. Remove from heat.

            To assemble the taco wraps, take a lettuce leaf and spoon a generous amount of the meat mixture into the center.

              Top with diced tomatoes, avocado, shredded cheddar cheese, and fresh cilantro.

                Serve each wrap with a lime wedge and optional toppings like salsa or sour cream.
