Ingredients

2 cups green cabbage, shredded

1 cup red cabbage, shredded

1 cup carrots, grated

1 cup bell peppers (red or yellow), thinly sliced

1 cup purple radishes, thinly sliced

1/2 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1/2 cup roasted peanuts, roughly chopped

1/4 cup almond butter or peanut butter

For the Dressing:

1/4 cup soy sauce or tamari

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 teaspoon fresh ginger, grated

1 teaspoon garlic, minced

Juice of 1 lime

Red pepper flakes (to taste)

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrots, sliced bell peppers, and radishes. Toss gently to combine.

Make the Dressing: In a separate bowl, whisk together the almond or peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, grated ginger, minced garlic, lime juice, and red pepper flakes until smooth and well-combined. If the dressing is too thick, add a splash of water to adjust the consistency.

Combine and Toss: Pour the dressing over the slaw mixture and toss everything thoroughly so that all the vegetables are evenly coated with the dressing.

Add Fresh Ingredients: Gently fold in the chopped cilantro, sliced green onions, and roasted peanuts into the slaw for added crunch and flavor.

Chill (Optional): Allow the slaw to chill in the refrigerator for about 15-30 minutes before serving to enhance the flavors and crispness.

Serve and Enjoy: Serve the Crunchy Thai Peanut Slaw as a refreshing side dish, or enjoy it as a main dish topped with grilled chicken or tofu!
