Cucumber Avocado Summer Rolls

8 rice paper wrappers

1 medium cucumber, julienned

1 ripe avocado, sliced

1 cup carrots, julienned

1 cup red bell pepper, thinly sliced

1 cup fresh cilantro leaves

1 cup fresh mint leaves

1 cup vermicelli noodles, cooked according to package instructions

¼ cup soy sauce or tamari (for dipping)

1 tablespoon sesame oil

1 tablespoon lime juice

Optional: sliced jalapeños for heat

Prepare the Ingredients: Start by cooking the vermicelli noodles according to the package instructions. Drain and rinse under cold water. Set aside. Julienne the cucumber, carrots, and red bell pepper. Slice the avocado and set everything aside.

    Make the Dipping Sauce: In a small bowl, combine the soy sauce or tamari, sesame oil, and lime juice. Whisk until well blended. For an extra kick, you can add sliced jalapeños according to your taste.

      Soak the Rice Papers: Fill a large shallow dish or a pie plate with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds or until it becomes pliable. Carefully lay it flat on a clean, damp kitchen towel.

        Assemble the Rolls: On the bottom third of the rice paper, layer a small amount of vermicelli noodles, followed by a few slices of cucumber, avocado, carrots, red bell pepper, and a handful of fresh cilantro and mint leaves. Remember not to overfill!

          Roll It Up: Start by folding the bottom of the rice paper over the filling, then fold in the sides and roll it away from you tightly but gently, similar to making a burrito. Repeat with the remaining rice papers and fillings.
