Ingredients

1 large cucumber, thinly sliced

8 oz (225g) cream cheese, softened

2 tablespoons fresh dill, chopped (or 1 tablespoon dried)

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

8 slices of whole grain or white bread

Optional: radish slices for garnish

Optional: additional herbs (such as chives or parsley)

Instructions

Prepare the Cream Cheese Spread:

In a medium mixing bowl, combine the softened cream cheese, chopped dill, lemon juice, garlic powder, salt, and pepper. Mix until well blended and smooth. Adjust salt and pepper to taste.

      Assemble the Sandwiches:

Spread a generous layer of the cream cheese mixture evenly over four slices of bread.

          Layer the Cucumbers:

Arrange the thinly sliced cucumbers on top of the cream cheese layer, overlapping slightly for a neat appearance. If desired, season the cucumbers with a sprinkle of salt and pepper for added flavor.

              Top and Slice:

Place the remaining four slices of bread on top to close the sandwiches. Gently press down. If desired, use a sharp knife to trim off the crusts for a more refined look. Cut each sandwich into quarters (or halves, if you prefer).

                  Garnish (Optional):

Top each sandwich with a radish slice or a sprig of fresh herbs for an elegant touch.

                      Serve:

Arrange the sandwiches on a platter and serve immediately, or cover with a damp cloth and refrigerate for up to an hour before serving.
