Ingredients

3 medium cucumbers, sliced into half-moons

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), diced

1 small red onion, thinly sliced

1 cup feta cheese, crumbled

¼ cup black olives, pitted and sliced (optional)

¼ cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley or mint, for garnish

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the sliced cucumbers, halved cherry tomatoes, diced bell pepper, and thinly sliced red onion. If using, add the sliced black olives for an extra briny flavor.

Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined. Taste and adjust seasoning as necessary.

Combine: Pour the dressing over the vegetable mixture. Gently toss everything together to ensure the vegetables are evenly coated with the dressing.

Add Feta: Sprinkle the crumbled feta cheese over the salad and lightly fold it in, ensuring it remains in chunks rather than fully mixing it in.

Garnish: Finely chop some fresh parsley or mint and sprinkle it over the top for a burst of freshness.

Chill: For the best flavor, let the salad sit for at least 15 minutes at room temperature or in the refrigerator before serving. This allows the flavors to meld together beautifully.
