Ingredients

1 pound large shrimp, peeled and deveined

2 medium cucumbers, thinly sliced

1/2 red bell pepper, diced

1/4 cup red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

1 tablespoon lime juice

1 teaspoon honey

1/2 teaspoon chili powder

1/4 teaspoon garlic powder

Salt and pepper to taste

Optional: Lettuce leaves for serving

Instructions

Cook the Shrimp: In a large skillet, bring a splash of water to a simmer over medium heat. Add the peeled and deveined shrimp, cover, and let steam for about 3-4 minutes until they turn pink and opaque. Remove from heat and let cool.

Prepare the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey, chili powder, garlic powder, salt, and pepper until well combined. Adjust seasoning based on taste.

Combine Ingredients: In a large bowl, add the cooled shrimp, cucumber slices, diced red bell pepper, red onion, avocado, and chopped cilantro.

Dress the Salad: Pour the dressing over the shrimp and vegetable mixture and gently toss to combine, ensuring everything is well coated.

Serve: If using, arrange lettuce leaves on a serving platter. Spoon the cucumber shrimp salad onto the lettuce. Garnish with additional cilantro if desired.

Chill: For best flavor, let the salad sit in the refrigerator for about 15 minutes before serving.
