Decadent Date Brownies

1 cup Medjool dates, pitted and chopped

½ cup walnuts, chopped

½ cup almond flour

½ cup cocoa powder

¼ cup coconut oil, melted

¼ cup maple syrup

2 large eggs

1 tsp vanilla extract

½ tsp baking soda

¼ tsp sea salt

½ cup dark chocolate chips (optional)

Instructions
 

Preheat oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

    Prepare the date mixture: In a small saucepan, combine the chopped dates with ½ cup of water. Simmer on low heat for about 5-7 minutes until the dates are soft and have absorbed most of the water. Remove from heat and let cool slightly.

      Blend the mixture: Once cooled, transfer the date mixture to a food processor. Add the melted coconut oil, maple syrup, eggs, and vanilla extract. Blend until smooth and creamy.

        Combine dry ingredients: In a mixing bowl, whisk together the almond flour, cocoa powder, baking soda, and sea salt until fully combined.

          Combine wet and dry ingredients: Pour the date mixture into the bowl with the dry ingredients. Gently fold until everything is well combined. Do not overmix. If using dark chocolate chips, fold them in at this stage.

            Transfer to baking pan: Pour the brownie batter into the prepared baking pan. Use a spatula to spread the batter evenly to the corners.

              Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).

                Cool and slice: Once baked, remove the brownies from the oven and let them cool in the pan for about 15 minutes. Lift them out using the parchment paper and transfer to a wire rack to cool completely. Once cooled, slice into squares.

                  Serve: Enjoy these decadent date brownies on their own, or with a scoop of vanilla ice cream for an extra indulgent treat!
