Delicious Ground Beef Enchiladas

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) red enchilada sauce

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/4 tsp salt

1/4 tsp black pepper

8 small corn tortillas

2 cups shredded cheese (cheddar and pepper jack mix)

Fresh cilantro, for garnish

Sour cream, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef Filling: In a large skillet over medium heat, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 6-8 minutes. Drain any excess fat.

      Season the Beef: Stir in the black beans, enchilada sauce, ground cumin, chili powder, smoked paprika, salt, and black pepper. Simmer the mixture for 5 minutes to allow the flavors to meld.

        Prepare the Tortillas: In a small skillet, lightly toast each corn tortilla for about 30 seconds on each side over medium heat until they are pliable. This will help prevent them from cracking when rolling.

          Assemble the Enchiladas: Spread about 1/4 cup of the beef mixture in the center of each tortilla, then sprinkle with a small amount of shredded cheese. Roll the tortilla tightly and place it seam-side down in a greased baking dish. Repeat until all tortillas are filled and arranged in the dish.

            Top with Sauce and Cheese: Pour remaining enchilada sauce evenly over the top of the rolled enchiladas, then sprinkle the remaining shredded cheese over the sauce.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbling and golden.

                Serve: Allow the enchiladas to cool for a few minutes. Garnish with fresh cilantro and serve with sour cream on the side if desired.
