2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 carrot, peeled and diced

1 celery stalk, diced

1 teaspoon dried basil

1 teaspoon dried oregano

1 can (28 oz) crushed tomatoes

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

1 package (about 16 oz) refrigerated gnocchi

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Heat the oil: In a large pot over medium heat, add the olive oil. Once it’s shimmering, add the diced onion and sauté for 3-4 minutes until translucent.

    Add aromatics: Stir in the minced garlic, diced carrot, and celery. Cook for an additional 4-5 minutes until the vegetables are softened.

      Season it: Sprinkle in the dried basil and oregano, stirring to blend the spices with the vegetables for about 1 minute until fragrant.

        Crushed tomatoes: Pour in the crushed tomatoes and vegetable broth. Stir well to combine and bring the mixture to a gentle boil.

          Simmer: Reduce the heat to low and let the soup simmer for 15 minutes, allowing the flavors to develop.

            Blending (Optional): For a smoother consistency, use an immersion blender directly in the pot to purée the soup. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth. Return it to the pot.

              Creme it up: Stir in the heavy cream and bring the soup back to a gentle simmer. Season with salt and pepper to taste.

                Gnocchi time: Add the gnocchi to the pot and cook for 3-5 minutes or until they float to the surface and are tender.
