Ingredients

1 pound ground beef (or turkey)

1 packet taco seasoning mix

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned, frozen, or fresh)

1 medium tomato, diced

1 cup shredded lettuce

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup diced red onion

1/2 cup sliced black olives (optional)

1 avocado, diced (optional)

1 bag (9.75 oz) Nacho Cheese Doritos, slightly crushed

1 cup sour cream

1 cup salsa

Fresh cilantro, for garnish (optional)

Instructions

Cook the Beef: In a skillet over medium heat, cook the ground beef until browned (about 5-7 minutes). Drain the excess grease.

Season the Meat: Add the taco seasoning mix to the cooked beef, following the instructions on the package (usually adding a specified amount of water and simmering for about 5 minutes).

Prepare Ingredients: While the beef is cooking, prepare the remaining ingredients by dicing the tomatoes, onions, and avocado. Rinse and drain the black beans and corn.

Assemble the Salad: In a large mixing bowl, combine the shredded lettuce, cooked taco meat, black beans, corn, diced tomatoes, red onion, cheese, and black olives (if using).

Add the Crunch: Just before serving, add the crushed Doritos to the salad for a delightful crunch.

Dressing It Up: In a smaller bowl, mix the sour cream and salsa together. Drizzle over the salad and toss gently to combine.

Serve: Portion the taco salad into bowls and top with diced avocado, cilantro, and extra Doritos if desired. Enjoy immediately for the best crunch!
