1 cup grated zucchini (about 1 medium zucchini)

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon (optional)

1 cup semi-sweet chocolate chips

1/2 cup chopped nuts (walnuts or pecans - optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. Set aside.

      Mix the Wet Ingredients: In a large mixing bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.

        Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, cocoa powder, baking soda, baking powder, salt, and cinnamon (if using) until there are no lumps.

          Combine Wet and Dry Mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Do not overmix.
