1 pound assorted mushrooms (cremini, shiitake, and button), sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup Marsala wine

1 cup vegetable broth

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Salt and pepper to taste

1 cup cooked farro or rice (optional, for serving)

Prepare the Ingredients: Clean and slice the mushrooms, chop the onion, and mince the garlic. Set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil and butter. Once the butter has melted and is bubbly, add the chopped onion. Sauté for about 3-4 minutes until the onion becomes translucent.

      Add Garlic and Mushrooms: Stir in the minced garlic and cook for another minute until fragrant. Add the sliced mushrooms to the skillet. Cook for about 7-10 minutes until the mushrooms release their liquid and become tender.

        Deglaze with Marsala: Pour in the Marsala wine, stirring to deglaze the pan, scraping up any browned bits from the bottom. Allow the wine to simmer for about 5 minutes, evaporating some of the alcohol and reducing slightly.

          Incorporate Broth and Seasoning: Add the vegetable broth and fresh thyme to the skillet, mixing well. Season with salt and pepper to taste. Bring the mixture to a simmer and cook for an additional 10-15 minutes, allowing the sauce to reduce and thicken.
