Easy Balsamic Vinaigrette Pasta Bake

12 oz (340g) penne pasta

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 bell pepper (red or yellow), diced

1/2 cup red onion, chopped

3 cups spinach, roughly chopped

1 cup mozzarella cheese, shredded

1/2 cup balsamic vinegar

1/4 cup olive oil

1 tsp garlic powder

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1/4 cup fresh basil, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Vegetables: In a large mixing bowl, combine the cherry tomatoes, zucchini, bell pepper, red onion, and spinach.

        Make the Vinaigrette: In a separate bowl, whisk together the balsamic vinegar, olive oil, garlic powder, oregano, salt, and pepper until well combined.

          Combine Ingredients: Add the cooked pasta to the bowl of vegetables. Pour the balsamic vinaigrette over the pasta and vegetables, and toss until everything is evenly coated.

            Assemble the Bake: Transfer the pasta mixture to a greased 9x13-inch baking dish. Sprinkle the shredded mozzarella cheese evenly on top.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven, let it cool for a few minutes, and then sprinkle fresh basil over the top before serving.
